These delicious sweet potato, black bean, quinoa bowls are quick and easy to make in the instant pot. They're super healthy and easy to customize flavors with your choice of toppings. They have the added bonus of being gluten free, dairy free, vegetarian, vegan and whole food plant based.

- 4 Cups Sweet Potatoes Diced
- 1 15 oz can Black Beans Drained and Rinsed
- 1 Cup Uncooked Quinoa
- 1 Cup Frozen Corn
- 1 Red Bell Pepper Diced
- 2 Cups Vegetable Broth
- 1 tsp Chili Powder
- 2 tsp Cumin
- 1 tsp Garlic Salt
- 1/2 tsp Ground Thyme
- Thinly Sliced Green Onions for topping
- Cilantro for topping
- Shredded Cheddar Cheese for topping
- Sliced Avocado for topping
Add all ingredients to the instant pot, stir to combine. Set on high pressure for 3 minutes. Naturally release for 8 minutes, then manually release the rest of the way. Stir to mix ingredients together before serving. Add your choice of toppings, and enjoy!
