Tuscan Sausage And Potato Instant Pot Soup

There’s just something about a good warm and hearty soup for dinner. I’m a huge fan of soups for a few reasons. One being that it’s usually just one pot to have to clean. I love being able to just dump everything in and let it cook. Soups are a great way to sneak in lots of healthy vegetables, making it especially nice if you have kids who resist eating their veggies.

If I have time at home to cook dinner I love having a pot of soup simmering for a while. However, many of our nights these days involve us running around to kids’ activities. When we get home we need to have dinner ready in a flash. With the instant pot I’m able to either start it before heading out for afternoon activities, and keep warm until we’re home or I can start it right when we get home. It’s able to cook our meal in a short time while I’m free to help kids with homework or go through their papers from the day.

This is the perfect savory soup to fill you up and give you all the comforts you crave on a chilly night. It was created by combining two different soup recipes from my favorite Instant Pot cookbook using what I had on hand.  We usually have a selection of meat in the freezer and I love to keep a bag of chopped Kale in the freezer as well.  It’s handy to have for tossing in soups like this one and our smoothies.  In the pantry I always keep potatoes, onions and a variety of beans on hand.  And I never go without a jar of Better than Boullion in both chicken and beef flavors.

Tuscan Sausage and Potato Instant Pot Soup

Hearty warm Tuscan style soup with potatoes, sausage, beans and kale.  This flavor packed soup is both Dairy Free and Gluten Free and ready in no time with the Instant Pot.

Ingredients
  

  • 1 lb Ground Sausage
  • 1 Onion chopped
  • 3 medium Russett Potatoes peeled & cubed
  • 2 Cups Chopped Kale
  • 2 Cans Cannellini or other white beans
  • 2 Cups Chicken Broth
  • 1 Bay Leaf
  • Salt and Pepper To taste

Instructions
 

  • Sautee sausage in Instant Pot using sautee function.  Cancel sautee mode when meat is browned. Add vegetables, beans, broth, and bay leaf.  Cook on high pressure for 5 minutes.  Use natural release for 10 minutes, then manually release the rest of the way.  Using a potato masher, slightly mash potatoes to create a creamier consistency.  Add salt and pepper to taste.  Enjoy!
