delicious healthy dinner ready in minutes
There is nothing better for busy weeknights than an easy one pot meal. Finding a meal that cooks in minutes, tastes delicious, and is healthy is not easy! When I came up with this recipe, I was thrilled to find that my kids absolutely loved it. They didn’t even realize it was super nutrient packed!!
I have been on the hunt recently for some meals that meet our new family requirements. Our meals must be gluten free and dairy free. I love to find whole foods-plant based meals that cook quickly. I found delicious sounding meals, yet they needed to be baked for an hour. The ingredient combinations sounded great, though I don’t have hours to prepare dinner on weeknights.

The Instant Pot has become our best friend lately. With three busy kids, it is a life saver on our busy weeknights. In a pinch one night for dinner, I tossed the ingredients from similar oven bake recipes into the pot, guessed on the time and completely lucked out. And once again, The Instant Pot gave me another winner! The kids gave a huge thumbs up for this recipe and devoured their bowls full of healthy goodness.

You can really get creative with this recipe and adjust it to your liking. Add in some shredded chicken, ground beef, or ground turkey if you are wanting some meat, or enjoy it without. You could add any toppings of choice, serve over a bed of greens, or as a taco filling. The leftovers are even great for breakfast with a fried egg!

Sweet Potato Black Bean Quinoa Instant Pot Bowls
Ingredients
- 4 Cups Sweet Potatoes Diced
- 1 15 oz can Black Beans Drained and Rinsed
- 1 Cup Uncooked Quinoa
- 1 Cup Frozen Corn
- 1 Red Bell Pepper Diced
- 2 Cups Vegetable Broth
- 1 tsp Chili Powder
- 2 tsp Cumin
- 1 tsp Garlic Salt
- 1/2 tsp Ground Thyme
- Thinly Sliced Green Onions for topping
- Cilantro for topping
- Shredded Cheddar Cheese for topping
- Sliced Avocado for topping
